VLC can add subtitles if there is a subtitle file in the same directory as the file. I think (have not tested this) that subtitle file must have the same name as the movie file (well except for the extension). So MyMovie.mp4 needs MyMovie.srt in the same directory.

You can just point VLC to any subtitle file in any folder on your computer. I've done it many times where the video and subtitle files were named differently and in different folders.

Is there a technical reason my IMAX theatre only has 3D projections or are they just imposing that upon their clients?

Yeah, that's on your theater. Mine has both 2D and 3D IMAX showings of Star Wars.
