I have seen parts of One Flew Over the Cuckoo's Nest, but not the entire thing. However, I have read the play and have done a staged reading of the play (I played the stutterer), so it's not like I don't know the story or every beat. However, I will rectify this error soon.

Missing a few, but I've heard of all these films so that's a clear sign that a list probably isn't worth prioritizing in terms on catching up on what I missed. Also, FBC is represented kind of okay on this list.

Seen them all. 19 of them I've seen at least twice.

For those curious, these are the ones I have only seen once:

8 1/2
The Bicycle Thief
Dr. Strangelove
Lawrence of Arabia
On the Waterfront
Schindler's List
Sunset Blvd.
Taxi Driver

11 are in my Top 100.
2 I don't like, but none seem out of place on a list of essentials. I would probably trade out Silence for Raiders of the Lost Ark. And it seems wrong to not have Rashoman or Seven Samurai, but you can nitpick omissions on any list of essentials that is so small.

marking them as a starting list of essentials for anyone serious about film.

I guess that many people of my generation - when film was much more ŕ la page than today - have seen 90% of these titles without being serious about film. And the more I look at the list the more I wonder how old are the guys who made these lists, with the exception - for obvious reasons - of Spirited Away or Silence of the lambs, it's a list that could have been compiled in 1980.
Last September the Sight & Sound list looked much more provocative and interesting to me, have we already done a similar poll on that list?

The Boards have lots of great Polls and Checklists. I also couldn't find one for Sight & Sound. What I like about this list is that it comes from a compilation of 145 Lists. Lists that have been made by everyone...even you.
38 Lists come from various IMDB lists where anyone can vote. They are divided by Decade and Genre.
8 Lists come from Critics, including Roger Ebert and Jonathan Rosenbaum
21 Lists are from Awards Shows. 5 are the Oscars and the rest are from other countries.
28 are from websites. They tend to cover more genre material and collectively lowers the average age of the "the guys" quite a bit.
There are another 24 Country specific lists.
18 are from Institutes. 5 are the AFI lists, 4 are British Film Institute, 2 are Criterion, another 2 Cahiers du cinéma
3 Directors have personal lists included. Scorsese, Kurosawa and Tarantino
and then there are 5 additional lists, such as 500 Essential Cult Movies

It's also interesting that you made 1980 the cutoff. One title that I think absolutely belongs and is usually excluded from such a list is 1977's Star Wars. And when I say absolutely belongs, I'm not referring to personal opinion but it's place in cinema history. Also, you forgot Pulp Fiction (2004) and Schindler's List (1993)
