1SO which films make up Gillian's Imagination trilogy?
Time Bandits (1981), Brazil (1985), and The Adventures of Baron Munchausen (1988). All are about the "craziness of our awkwardly ordered society and the desire to escape it through whatever means possible." All three movies focus on these struggles and attempts to escape them through imagination; Time Bandits through the eyes of a child, Brazil through the eyes of a man in his thirties, and Munchausen, through the eyes of an elderly man.

Tsai's Walker films really has four: Walker, Walking on Water, Journey to the West and No No Sleep, but I'd count the first three as a trilogy.  Still, I won't put it on my list because who knows how many he'll make in his "retirement".

Have you seen Walking on Water? If so, how and where?

According to IMDb, there are others in the series as well, that I have not found yet: Sleepwalk (Meng you) and Diamond Sutra (Jingang Jing). There's also Xing Zai Shui Shang (which may be the same as Walking on Water), and the "Walker" segment of Beautiful 2012 (which may be the same as the first Walker)

I thought the original Walker movie was shown in Beautiful 2012.

And no, I haven't seen Walking on Water.  So, as far as I'm concerned it's a trilogy, but I hold out hopes to see Walking on Water someday.

I was tempted to list Koker trilogy, but I really need to rewatch the first one. I didn't appreciate it until after I'd seen the other two.
