I don't have 5 and never seen any version of a Nosferatu film though I am going to say Herzog's version since you loved Aguirre so much

Maybe Blade I and II... but it's been ages. I can't think of a Vampire movie I definitely like.

HM: Buffy the Vampire Slayer series, which I don't think should be included in "movies", but it's probably my favorite vampire story, especially the second season.

Never heard of Byzantium but going to search it out from what I briefly read.
