This weekend, my 13 year old and I were watching
Leap Year and during the story, Declan teaches Anna how to make Coq au Vin.
I've never made Coq au Vin, so decided to give it a try. I browsed through a handful of recipes to get the gist of it. I didn't have wine, but did have some lingonberry jam from IKEA!
I made a beef broth with it and a little vinegar and marinated the chicken for a few hours. Then I chopped things and fried things and reduced the marinade way down and threw it all in the oven. It turned out really great! Robust and just a hint of sweet.
Leap Year is fairly forgettable, but now I have a new way to make chicken!
