I'd also recommend "Iron Monkey" "Legend of Drunken Master" and some a few classics from the Shaw Bros.

Iron Monkey
Once Upon A Time In China
Crouching Tiger, Hidden Dragon
Ong Bak


For a start.  That gets you many of the top stars and some really great action.  Gotta stop now before the list gets really long.

How about Young Taoism Fighter (re-released as Wu-Tang Temple), in which the protagonist learns a technique that allows him to detach his body parts, which fly about the room pummeling his opponents?  ;D
