Southwestern Salmon En Croute

It's a frozen entree from Trader Joe's (my favorite grocery store), Salmon with black beans, poblano peppers, and corn, all wrapped up in puff pastry.  It's in the oven now, I have high hopes for this one.
Sounds great! Looking forward to hearing how it is.

For me, Havarti-stuffed chicken and either corn-on-the-cob or spinach sauteed with basil (I'm sure the kids will root for the former!)

It's a bit oily, but the flavors are really good.

Why don't you cut the corn off the cob and mix it in with the spinach and basil?  The best of both worlds!

Nice; I'll have to try it. It's been too long since I've been to Trader Joe's; going there is a bit of a jaunt for me, but it's always worth it!

As for me I'll either make a sandwich (requires trip to store) or go buy a couple tacos.  >:(

Tonight it will be oven roasted bbq pulled pork, coleslaw, and baked beans.  For dessert, an almond blueberry nectarine cobbler.
