I marinated and grilled some salmon in garlic & a cherry balsamic vinaigrette. Then, I ate it over pasta with pineapple salsa. Seems like a lot of different flavors? But it was yummy? Uh... I have $8 until Friday. I'm just hoping not to run out of food entirely.
That does sound really yummy. Hope you don't run out of food either :( - I know what that feels like, unfortunately. Rice and beans?

Pasta and bus ride probably. Coffee's free at work!

When we have beans, potatoes, and carrots, and don't know what to do with them, we make hodge podge. So simple, but so good.
That's a good idea! I ended up roasting the lot (except the chard) with olive oil, garlic, and fresh herbs - and I had a couple of lamb chops in the freezer. So we'll do for tonight.

But this looks sooo good:

Summer squash (basically tastes like zucchini) in the middle, and the round yellow thing is a tomato.

Have you decided what to have for dinner.  You could always roast the veggies and dress them with a nice summer viniagrette.  Is that swiss chard I see? The veggies would also make a good soup with the chard. Light vegetable broth with a dollop of pesto on top.

Your meal looks so delicious, jdc!

Sorry, ses - didn't see this earlier! Your suggestions sound great - I did end up roasting them with olive oil and fresh herbs. I also made a couple of lamb chops in a herbed balsamic vinegar glaze - made for a nice flavor next to the veggies. And yes, that is Swiss chard - that I sauteed in olive oil and garlic for a few minutes as another side dish.
