Pork chops marinated in orange, garlic and thyme with kumera/sweet potato and baked balsamic tomatoes. The meal was well received but I have a suspicion ginger would have been a better choice.
He made me feel like a third class witch doctor.

Made steak for 4 last night and modified technique a little. It worked out great.

1) buy 2" thick ribeye not trimmed
2) heavily season with kosher salt
3) let sit out for 1.5 hours (a lot of water will be drawn out)
4) rinse steaks and totally dry
5) bring cast iron pan to medium
6) render fat from edges for about 4min per steak
7) cook each side for 2 min
8) take off and rest for 10 min
9) clean pan
10) bring to med-high
11) add liberal amount of butter
12) sear each side for 60 sec continually basting with butter
13) rest for 6 min

Had stuffed potatoes and roasted asparagus with them.

Cajun Shrimp, Rice pilaf and steamed Asparagus.

Asparagus was on sale for .99 cents a pound and I couldn't pass it up.

I found a 7 ingredient Cajun spice recipe twenty years ago, and have spent the last two decades tweaking it. It now has 14 spices in it, and from what my friends have told me, is the best Cajun spice mix around.

If anyone would like the recipe, let me know.

If you find half off sushi, skip it.

Also, feel free to pass on the recipe if it is not a secret.  I make my own cajun shrimp at times but do it pretty much from a magazine with a few variations (more beer...) so would always try yours if I can find the correct ingredients.

Cajun Spice Mix

hungarian paprika
Onion powder
Garlic powder
Black Pepper
White Pepper
Basil
Ground Coriander
Chili Powder
Ground Bay Leaf (3 Bay Leaves)
Thyme
Ground Mustard
Ground Cloves
     
When I make this, I make it in at least a quadruple batch, and then refrigerate in an air tight container. Place all ingredients in a food processor and grind until all leaf herbs are pulverized.

When cooking with this mix, coat generously whatever you are making (Shrimp, Chicken or Beef Tenderloin), and pan fry in a heavy black iron skillet with fortified butter.

Capellini with a Red Wine, Roasted Red Pepper and Mushroom Meat sauce. Topped with Grana Padano cheese.

I like Grana Padano better than Parmigiana-Reggiano, less salty.

That Cajun Mix isn't 100 miles from what I would put into a Curry Mix.

You put the cloves into a pan with Cardomum seeds and Bayleaves. Sweetens the onion. Cardomum seeds when you bite into them are an unworldly pleasure, just feels wrong but is so good.

Then other spices would be Cumin, Turmeric, Garam Masala. Extras then are Tamarind Paste, Ginger & Cocunut block.


The rest would be very similar. EXCEPT 2 TBSP of Cayenne! Oh my god!
