Braised boneless Chicken Thighs with Collard Greens, latino style. I've been working this recipe out in my head for a couple of weeks and decided to give it a go today.

This thread has been far too silent for far too long...

Eggplant Trattoria



It set very nicely and the smell was heavenly. I topped it with my Chunky Sweet Pomodoro sauce.



What a ridiculous amount of prep work to make this. It was really, really good, but I doubt I'll ever go through another 3 hours of preparation again. Thank God my wife was at work while I was making it, the kitchen was a disaster area. I just finished prepping it and getting it into the oven about 15 minutes before she got home. I already had half of the mess cleaned up.

Antares! I missed this. It's a work of art. :) I hope she appreciated all the time you put into cooking it and you should have let her see the whole messy kitchen to know what you did for her.

She liked it, but it didn't really float her boat. The good thing is now I have a decent of amount frozen for a later date. It was so good, I had a piece for breakfast the next day.

Hey did you do the thing where you sprinkle salt all over the aubergines and then squeeze out the bitter juice that the salt dehydrates out of them? What a load of faff!
