We went to our favorite vegan restaurant in chinatown. She had General Tso's shrimp and I had General Tso's medley. There was also scallion pancakes and a beef bun. All vegan, all delicious.

  I had a 12 oz fillet mignon last night - not all vegan but close.
  I feel good that the cow lived a fullfilling life before becoming my main course - eating, crapping, chewing cud...I am betting it was one of those happy California cows.

  I did have organic corn with that...and mashers and a honkin huge bisquit...

But I wish the public could, in the midst of its pleasures, see how blatantly it is being spoon-fed, and ask for slightly better dreams.

we ended up not making it.  i just couldn't remember all the stuff that the beans cook with and what might be in the fake meat - was pretty sure there was nothing dairy but not positive.  here is the emeril recipe i work off of, striking all the meat and adding some fake sausage of some kind:

1 pound dried red beans, rinsed and sorted over
3 tablespoons bacon grease
1/4 cup chopped tasso, or chopped ham
1 1/2 cups chopped yellow onions
3/4 cup chopped celery
3/4 cup chopped green bell peppers
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Pinch cayenne
3 bay leaves
2 tablespoons chopped fresh parsley
2 teaspoons fresh thyme
1/2 pound smoked sausage, split in half lengthwise and cut into 1-inch pieces
1 pound smoked ham hocks
3 tablespoons chopped garlic
10 cups chicken stock, or water
4 cups cooked white rice
1/4 cup chopped green onions, garnish

yeah, it is brilliant as is, but lara does not eat the meat.  if we have a bunch of people over we'll do a batch of meaty and a batch of veggie (actually, we've only made it for a group once)
