Haven't seen any of his movies from the 90s, but I'm happy with picking Brokeback Mountain.

I've seen: Eat Drink Man Woman, The Ice Storm, Crouching Tiger, Hidden Dragon and Brokeback Mountain. I liked all of them, but I'm going with Brokeback.

I voted for The Ice Storm.  It's my favorite of his films so far.  I haven't seen his first 3 films from Taiwan in their entirety. 

Brokeback Mountain is probably 2nd due to repeated viewings on HBO followed by Crouching Tiger, Hidden Dragon, Sense & Sensibility, and Lust, CautionRide with the Devil is pretty good though not great.  The Hulk is my least favorite still though I don't think he deserved the bad rap he got for that film.

I went with Brokeback, though I'm also a big fan of Crouching Tiger and Sense and Sensibility, as well as 2 of his early films, Wedding Banquet and Eat Drink Man Woman.
