Was Sanjuro okay to watch without the knowledge of Yojimbo ?

I mean, I managed, and I still haven't seen Yojimbo, so I suppose I wouldn't know.

Dersu Uzala, Sanjuro, The Hidden Fortress, Akahige, Stray Dog are all at a similar canonical level as Drunken Angel and Kagemusha I'd say. I'd throw in The Bad Sleep Well and Dodesukaden, but even though I like them more they're not in that same tier critically. The other 7 you've seen are probably the top 7 canonical ones, so it depends what you mean by Kurosawa canon.

So...basically all of his movies are canon ?  ;)

What I mean, I guess, is which of his movies are essential, which are commonly revered masterpieces ?

Seven Samurai, Ikiru and Rashomon I'd say are the top 3, in the conversation for best film ever tier. The next 4 are all time greats. If you want pure consensus masterpieces then it's just those 7. The ones I listed are next tier greats. They're all canon films that any film fan who hopes to watch the canon has to see, so essential but I wouldn't go so far as to say revered.  Kurosawa is one of the all time greats, that's how it goes, he made a lot of great and famous films. If someone asked for the Kubrick canon and I told them everything from The Killing onwards except maybe Lolita, would that really be an unfair answer?

In total between the ones you've seen and the ones I listed that's 15 films plus The Bad Sleep Well which isn't essential canon even if I think it should be. It's still only half his films. I wouldn't call any of the others essential, though there's some interesting stuff in there and I haven't seen them all.

You need to see Akahige, it's one of his best and you get to watch the last film that Kurosawa and Mifune made together.
