I can't tell if I would like this or not.

I was surprisingly unfond of Things We Do In The Shadows... I got bored and didn't finish it. Given how much I enjoyed Wilderpeople and Conchords I thought it would be a sure thing.

Is Documentary Now! anything like that?

I watched The Bunker and the humor reminded me a lot of Chirstopher Guest's films Waiting for Guffman and Best in Show.

That makes some sense to me. I'd give the ones you've seen the source for a shot first. The Gray Gardens one (the first of the first season, I think) is brilliant. The Jiro Dreams of Sushi one for this season is also hilarious because it still has some love for its characters. I would say that one isn't even all that laugh-out-loud funny, but it is a perfect parody and so warm that it has become a favorite. There's not really a bad one, though, not that I've seen. The Nanook of the North one gets the closest to bad, but that's just because I think it drags a bit. The half hour length really helps, usually.
