The reason people probably cite FOTR so often is that it kind of stands on it's own a little better than the other two, which kind of blend together.  Fellowship doesn't have concurrent storylines going on and that can be a pretty big strength.

Let's face it, when people only cite one movie they're usually trying to honor the whole trilogy, that's what the Academy did to ROTK and it's what end of decade list people are doing with the first.

I for one probably found ROTK to be the most satisfying, but I usually just like to look at it as a trilogy.

That's actually a very interesting point!  In the book Tolkien doesn't go back and forth.  And he was adamant that if the books were made into movies that the story had to be told that same way or it wouldn't work.

I don't think any sane person would pick a non-extended film.

My pick was The Two Towers.

The extenders are all better than the theatricals and Fellowship is the best if them all, though Two Towers is benefitted most by it's extended scenes.

Fellowship is easily my favorite. It is the most fun of the three, and works better as an adventure film than the rest of the trilogy. Two Towers and Return blend together more and are less consistently entertaining.

I believe this is how I would put them, too.
I need to watch Return again though; I've seen it fewest times - probably b/c I own the first two but not that one.
