Of their early tres blues stuff I'd recommend "Out Of Our Heads". There's a US version with "The Last Time" and "Satisfaction" on it. So I was disappointed, initially, to find the hits weren't on the UK version (plus the sleeve was wrong- sleeve US/ album UK). The UK version has these amazing songs;

Gotta Get Away
That's How Strong My Love Is (On both)
Heart of Stone

I think they proved their chops as a blues band with this album, then got a leg up from Lennon and McCartney, or else they still might be playing basements in West London.

My wife actually just got me the UK version for Christmas, along with a US Aftermath, but I haven't listened to it enough to make a proper judgement.

Easily Exile On Main Street. It's the only Stones album that I still care about. Some Girls maybe clocks in as a distant second choice. The rest merely is a (very) good song here and there.

Stones In Exile (2010) is a documentary on how EOMS came together that is well worth seeing if you are interested in the period. I don't care much for The Stones these days, but I liked the promotional film for their exhibition this summer:
